2 large sweet potatoes, peeled and cut into 1 inch cubes
4 T non-fat margarine
Kosher salt and pepper to taste
Directions
Boil the cubed potatoes in a large pot in heavily salted water until a sharp knife pierces the potato with no resistance, about 8 minutes.
Drain the potatoes well and the return to the pot. Add the margarine and mash with a potato masher or hand blender until smooth. Taste and adjust the seasoning as desired. Serve hot or store in an air-tight container in the refrigerator for up to 5 days.
